Seapea Fizz

¾ oz absinthe

¾ oz lemon juice

½ oz rich simple syrup

1 unit large egg white

2 oz soda water

Garnish

Fresh peppermint leaf

Glassware

Champagne flute or fizz glass

Instructions

Froth with an immersion blender. Shake with ice, strain into glass. Top with soda water and garnish with peppermint leaf.
